INGREDIENTS
- 15 ounces canned chickpeas, drained and rinsed
- 1 tsp capers, lightly diced
- ¼ diced pickle
- ¼ cup diced celery
- ¼ cup diced red onion
- 1 tbsp pure maple syrup
- 1-2 tsp Dijon or spicy brown mustard
- 2-3 tbsp tahini
- Healthy pinch of sea salt and black pepper
- Toppings for serving: tomato, sprouts, avocado, red onion, romaine lettuce, arugula
In a mixing bowl, mash chickpeas with a fork until they are coarse. Or you can pulse them a few times in a food processor.
Finely chop celery or pulse in food processor a few times. Transfer to the mixing bowl and add remaining ingredients, stirring to combine. Add sea salt and black pepper to taste. Add a squeeze of fresh lemon juice for extra flavour (optional).
