
Autumn Pumpkin-Apple Soup

2-3 Tbsp extra virgin olive oil
I medium onion, chopped
3 cloves of garlic, crushed and minced
1 large apple, chopped
2 cups veggie broth
3 cups pumpkin puree
1 can coconut milk
1 tsp pumpkin spice
sea salt to taste
DIRECTIONS
1. Chop onion garlic and apple.
2. Heat oil in a saucepan or pot and sauté onion until translucent
3. Add the garlic and sauté until golden brown.
4. Add the chopped apple and veggie broth, bring to a boil, and cook for 10-15 minutes, until the apple is soft.
5. Blend the mixture using an immersion blender (or food processor, once chilled).
6. Add coconut milk, salt and pumpkin spice and adjust the last two to taste
7. Garnish with toasted pumpkin seeds.
